Vendor Profile: Broken Arrow Ranch

It's no secret we love to use locally grown food at The Terrace Grill. Fresh and vibrant products make more delicious dishes and offer another way to experience what an area has to offer. The food is indicative of the area where it was grown, and like wine, takes on the minerally qualities of the land from which it came.
This will be the first of many vendor profiles featured. At The Terrace Grill and Riven Rock Ranch, we love to use quality products from artisans, and each product has a great story. This week we're featuring our good friends at Broken Arrow Ranch, fine artisan purveyors of antelope, venison and wild boar.
Recognized nationwide by discriminating chefs, Broken Arrow Ranch is located amongst lush springs and fertile valleys feeding the headwaters of the Guadalupe River. Like many of the ranches in this area, the land is not suitable for agricultural cultivation but provides a beautiful habitat for native and exotic deer and antelope populations. All of their stock is field harvested from over one million acres of the surrounding area. All deer and antelope are truly wild and free-range, providing meat that is naturally low in fat and calories but comparatively high in iron and protein. Game is harvested humanely and directly from the land, insuring the animal is not stressed which preserves the quality of the meat.
We use Broken Arrow products frequently in the restaurant from the weekly staples, axis venison burger and venison pizza, to the ever-changing mixed grill, which often features Broken Arrow products. We're happy to find that Broken Arrow Ranch is doing well. It has been featured on numerous TV programs, including Emeril Green.
